The table that makes a night in at the north end worth it. Kwame Onwuachi, whose Tatiana was the New York Times's top New York restaurant in 2023 and 2024, opened his first restaurant outside the East Coast here in April 2026, in a room designed by Modellus Novus around a jerk pit at the heart of the kitchen. The menu reworks the American steakhouse through Afro-Caribbean cooking: rum-aged steaks from New York strip to Wagyu tenderloin, jerk chicken by the half or whole, banana-leaf snapper, curried goat agnolotti and an oxtail Wellington layered with jerk beef bacon. The cocktails lean on rum, allspice and soursop, and Master Sommelier Chris Gaither built the wine list. Dinner only, from 5pm nightly until 10pm, and until 11pm on Fridays and Saturdays; book ahead for a weekend.

Our verdict

Book SAHARA for a redesigned Blanca or Marra room, free parking and its own Monorail station from about $55 a night midweek, or spend part of the difference on the Alexandria Iconic King, the biggest room short of a suite, in its 2014 Philippe Starck and Gensler design. Ride rather than walk to the centre Strip, and budget for the $54.95 nightly fee.
